Peanut Butter & Cranberry Energy Balls

New Year. New Me. No more cake. Ha, of course I’m joking. There will never be no cake. But with good intentions, I aim to get healthier – that means upping my gym attendance (meaning: to go for the first time in over a month!) I thought to keep my hunger at bay and to boost my energy post work-out I thought I’d put together some energy balls!

Peanut butter was a must – full of protein and good fats, it gives you a spike of energy while providing you with a healthy dose of protein post workout. Ginger is great for muscle soreness while honey is an excellent source of energy. Cranberries, coconut and oats all provide their own individual merits for post workout consumption, too. But most importantly, individually and together they all taste wonderful. Who says being healthy can’t be tasty?

INGREDIENTS:

Yields: 16

2 tbsp peanut butter
2 tbsp honey
2 tsp ginger syrup
1/2 ball stem ginger
25g cranberries
100g oats
50g desiccated coconut, toasted
50g chopped and toasted almonds
1/2 tsp vanilla bean paste
45ml cold water

Combine all the ingredients in a bowl so there is an even distribution of each different ingredient throughout. Place in the fridge for up to an hour.

After an hour, remove and take small handfuls and roll into the shape of a golf ball. Place in an airtight container in the fridge. These are perfect for when you’re a little peckish or before and after a workout.
