Rocky Road Brownies

Brownie No.2 is a camping favourite – Rocky Road! Gooey marshmallow, crunchy nuts and chocolate upon chocolate! What more could you want from a fudgey, gooey brownie? Not much, that’s what!

These were a big hit, and it’s not hard to see why. The base brownie is very much the same, so it’s case of pimp your own brownie.

Serves: 12

150 chocolate
170g self-raising flour
220 butter
220g brown sugar
3 eggs
50g cocoa powder
2 cups of mini marshmallows
handful of chopped nuts
80g dark chocolate, in squares

Pre-heat an oven to 170c and line a baking tray with parchment paper on both the sides and the bottom.

Melt the butter and chocolate in a bowl over a pan of simmering water. When fully melted together, set aside.


In a seprate bowl, seive the flour and cocoa powder together and add the sugar. Mix to combine and add the chocolate/butter mixture. Stir again to fully combine.

Add the eggs one by one, mixing in between each one. Once combined, stir in the marshmallows and nuts. Pour the mixture into the baking tray and level out. Scatter the remainder of the marshmallows on top, along with some more nuts and the dark chocolate squares. Bake for 25 minutes.

Once baked, leave to cool and then place in the freezer for an hour. To cut, place a knife in boiling water, wipe off the excess water and cut into squares – this helps create a nice, even square.

  1. Wow.. they look sooooo good. And I actually happen to have all the required ingredients at home except for the marshmallows. I’m going to try them out. Hopefully they taste amazing even without the marshmallows! 😋

    1. Hey, thanks for the comment. Marshmallows definitely add something to this, but you could always try a mix of popcorn and M&Ms if you’re really needing your brownie fix.

  2. I love these. I’ve just made salted caramel chocolate brownies on my blog and they were a hit but I think this recipe goes to a new level. Can’t wait to try it.
