Lemon Meringue Ice Cream

Summer is here and summer for me really is about those desserts that either take advantage of fruits in season or are simply beautifully refreshing. Enter in my Lemon Meringue Ice Cream. And the best thing? This ice cream is no churn, which means no need for any pesky ice-cream maker! Just wizz all the ingredients together and your mixer does all the hard work.

LEMON-AID

As you know, I freaking adore lemon. Whether it’s a syrup trickling through cake, a punchy citrus icing or even in a cocktail, lemon just speaks to me in a way no other fruit does. Citrus fruit in general is one of my favourites, but lemon takes the crown.

As a result, I spend my time trying to think of different ways to encorporate the tastes and textures of Lemon Meringue Pie. I turn them into a cakes, sweet treats and drinks alike. But Lemon Meringue Ice Cream is a game changer.

Lemon Meringue Ice Cream

.The curd hits you with that citrus flavour first. You’ve then got the added elements of the chewy meringue and the crumbly shortbread. Together, it replicates perfectly a forkful of Lemon Meringue Pie.

As this recipe is no churn, it’s so easy to do. It takes mere minutes to prep and then you can get on with life while it freezes it’s little ass  off.

INGREDIENTS

Yields: 8 servings

300ml double cream
110ml condensed milk
lemon curd
meringue
shortbread biscuits

METHOD
Whisk the double cream and condensed milk together until there are stiff peaks. Add a few table spoons of lemon curd and mix together to combine fully.

Decant half of the mixture into a loaf tin and add a few more teaspoons of the lemon curd. Crumble in some shortbread and meringue. Repeat with the remaining mixture and top with the toppings.

You can add as much or as little of the toppings as you wish, just make sure the shortbread is in small enough chunks it doesn’t effect the texture of the ice cream.
